edit: I totally neglected your price range there. I don't think you'll find anything nice and stainless with iron sights for that price unless I'm missing something. If you can lose the iron sights I highly recommend a Vanguard s2 stainless, or Savage 16 FCSS or maybe a Tikka Stainless.
A have a friend with the Model 70 stainless and it really is a nice rifle. Not my first choice though.
The Vanguard has a nice two stage trigger and three position safety. They are a little heavier but feel a lot more solid so you can get away with a bigger caliber and not get sore if you shoot it lots.
The Savage would probably be my first choice. You get the Savage accuracy, toughness, and it has a detachable mag and you can buy more for pretty cheap. It's a pretty standard hunting rifle weight I'd say. The Accutrigger is IMHO the best factory trigger you can buy. Nothing beats it in form and function.
The Tikka T3 stainless is an awesome rifle too. Has a detach mag but if you ever lose it they are pricey to replace. Very accurate rifles and probably the lightest thing you'll find in your price range. Can pack it all day but if you get it in any heavy hitting caliber you're really going to notice the bark. What I don't like about the Tikka is that all their rifles are built on long action only, and I'm a short action kind of guy.
You might also consider getting a stainless Savage Axis (bare with me). They are so cheap you can pretty much outfit it however you want. Lets say $350 for the rifle, you can get yourself a new trigger from rifle basix for about $120 delivered. Can get your choice of many stocks from Boyd's as they make them for the Axis now. They are a little heavier but make for a very nice rifle. Probably looking at about the same price as your trigger. You will still be WAY under budget and can spend that money on glass, ammo, tags, anything. It's just something to think about, but the Axis accuracy is as good as you'll ever need and if you can customize it exactly how you want why not do it? You could probably even have irons installed on it if you really wanted to.. and still be under budget...
