Steel Shot out of Mossberg 590?

I am advised that steel shot is OK in a modified or more open choke. Since your 14 inch barrel is probably a cylinder bore, it should handle steel alright.
The question is - why would you want to limit its performance with steel?
 
Thx. Yes, it is a cylinder bore. Actually, I don't even really know the diff/benefits of lead vs steel, was just wondering if steel was fine to use. I have some #2 Winchester 1400fps steel shot and was thinking of trying it at the range.
