Can't give an honest opinion about the Edge as I only fondled one and never got intimate with it. It felt cheaper somehow. Finish was extremely cheap, but it did have a removable magazine. But it was mostly plastic.
The Stevens on the other hand I can vouch for. Great little rifle. Very good accuracy for $300. Stock is crap and needs to be discarded as soon as possible.
DO NOT be deceived. These are hunting rifles that tend to have ok accuracy so that make decent target rifles too and are good to learn on. With some upgrades like a match barrel, trigger and stock and good optics and good handloads they can get very competitive, but you will spend a lot to see that accuracy. My 7mmRM in my sig was built on a Stevens 200 and is OK. Its just a toy really and not to be taken too seriously.

These are hunting rifles, not target rifles. If that's all you want to spend, that is all you are going to get, but that is not to say you can't have fun along the way.

It won't be your last gun if this is a hobby you enjoy, so just jump in. Understand there are better quality choices.

For your stated purpose the Stevens is a far better starting point. There are loads of upgrade parts available for it.

Of the two Stevens but why not consider something used?

there were some Sportcos on the EE for around $400.

There are also varmint type Savages and rems for not much more.

Something to consider.
