I have a Stevens "Crack Shot" Rifle No 16 it has a rolling block action.
When the rolling block is closed and the part with the extractor and the firing pin just flops open.
In some pictures I have looked at the lever is opposite to this one.
Should there be something like a spring holding it in place?
Also should the extractor go back to the closed position after the spent cartridge has been ejected?

The extractor has to be lifted up to go in front of the rim of the next round.

From 'Single Shot Rifles and Actions' by Frank de Haas.
There should be breech block plunger and spring to tension the block, supposedly making this the first Stevens rifle to have an automatic ejector as it cams over the plunger.
Also, his one photo of the right side of the open action shows the lever at 180% to yours, and he mentions that the lever was known to slip due to wear to the lever/breech block connection sleeve.
No mention of the extractor/ejector returning to position.

Given the information on the plunger yours is likely just gummed up and/or a little rusty. A detailed strip down and cleaning should do the trick. Or at worst you might find that the spring and plunger is missing. In that case you'll need to find a new set or make something up.

Thanks for your help guys.
The spring and plunger are probably causing the problem. A little gun about 100 years old and not looked after, will probably have some major problems like corrosion. The parts may be there but corroded, the spring may not be a problem the plunger will be.
The extractor needs some attention, taking it apart for a good cleaning could make it work better.
