Stock finish help

I'm getting to the point where I'm going to get my SMLE sent away to get the headspace checked out and the action checked out for safety, but the wood, I got a woodset to replace the Aussie wood on it, need some information on how to best refinish the stock wood, the wood, except maybe for the buttstock and forend is unstained and not very smooth, I'm resigned to the fact I'm going to use some oil type finish, probably as many as 10 coats or so or until it does not soak in anymore. Could I get some pointers?
 
give it a light wet sanding with some very fine 280 grit + sandpaper before staining thats about all the tips i can give you LOL dont have much expierience with wood finishes lol
