Sweet & Sour Pheasant over Brown Rice

Ingredients:
(Quantities as you prefer...have some fun, you can't mess it up)

- Pheasants breasted out and cut into small nuggets
- Batter of your choice....Pancake mix with corn flake crumbs
- Teriyaki Marinade
- Pineapple Juice


- Sweet Onions chopped
- Carrots diced
- Celery stalks chopped
- Red Peppers chopped
- Sweet & Sour sauce
- Brown Rice
- Dry Lentils

Instructions:

1) Marinate pheasant chunks in Teriyaki marinade and pineapple juice over night.

2) Batter and deep fry pheasant chunks until golden brown.

3) Saute all chopped veggies together except the red peppers (leave fresh).

4) Combine in casserole dish cooked pheasant nuggets, sauteed veggies, fresh red peppers and sweet & sour sauce.

5) Cook this mix in oven in casserole dish on 350F for 45 minutes.

6) While dish is busy in oven...Cook Brown Rice and Lentils together in microwave, only 5% lentils compared to rice.

7) Pour Sweet & Sour Pheasant over plenty of rice.

8) Eat and Enjoy...Pheasant NEVER tasted so good!
