I'd wait for him to tire out a 'lil, then try to cut him loose.

Put a knife on a long pole and once he gets tired walk within reach and cut it that way.

after he's tired tie the loose end to your truck and pull it tight, then do a Clint Eastwood and shoot the rope free. I wouldn't go near him with a 10" pole.

Looks like a good project for the makers of #######.
1 - Run in and grab the tag end of the rope...without getting a ####kicking.
2 - Hog tie angry wild animal with tag end of rope...without getting a ####kicking.
3 - Cut rope free from antlers of angy wild animal...without getting a ####kicking.
4 - Um, er, now you have a hogtied deer when the CO shows up...probably not a good thing unless you can show the CO the footage proving you didn't lassou the deer yourself.
Actually, you could probably hogtie him with a knot you can release from a distance...preferably inside a vehicle.

When I read the title "Swinging Deer" I thought "Oh great, going to be a video of some poor doe getting tag teamed."

I've wondered how long a deer takes to run out of steam and I guess I'd find out if I had been the one with the camera. Angry animal with antlers and loads of energy isn't something I go near without following behind the safe end of a boom stick. At least if you shot it though you'd have a little less work to string it up
