Which scope/reflex sight or just a reflex do you think would be the best combination on a Swiss Arms CQB rifle for practical rifle matches and maybe some paper shooting? Maybe I don't need anything and can just use the irons? I'm contemplating between the ACOG with the Docter Red Dot on top and Elcan DR, or maybe a single reflex sight like Eotech or Aimpoint.

There must be some mounting arrangements and mounts on which I can mount optics or reflex sights and that would flip (or can be removed) out of the line of sight to let me use the irons, and then flipped (put) back without losing zero? I don't have much experience in this, so, any help would be welcome.

I'm very partial to the Aimpoint T1 Micro.

Magnification is nice for a full size rifle on 300m + engagements, but IMHO not necessary for a CQB.

+1.
The whole point of the CQB is light weight/quick handling.
I run an Aimpoint H-1, with a Larue low mount and it works well.
You don't quite get co-witness with the irons, but other than that, it complements the carbine perfectly.

Swiss Arms CQB

Is there any reflex sight / mount on the market that would get me co-witness with the irons on that CQB?

I just posted a factory aimpoint low mount (for comp M, M2 and M3) in the EE. That will give you co-witnessing. This mount is lower than the ARMS M68 without spacer.

Alternatively, you can use a regular Aimpoint mount for AR - that will place the dot just above the hood but you cannot use the iron.

If you use the ARMS M68 without spacer, it will put the dot on the rim of the hood - not useable.

I would not recommend using ACOG with Dr Optic in tandem, unless you are using a cheek rest. The height of ACOG and the ergonomics of the Swiss Arms put you into a catch 22 position. it is a bit too high without cheek piece, but too low with it.

Aimpoint comp M4, 80,000 battery life, bullet proof super fast target aquisition, everything you need out to 100 yards. if you want magnification look closely at the nightforce 1-24x24 will give you all you need for cqb, plus good shooting capabilites out to 300M. In my humble opinion these two beat everything else hands down for the price.
