So I have cast ammo for 8mm Mauser and 6.5 carcano that I loaded in the winter it chambered fine and shot great, now in the summer you have to use excessive force to close the bolt, tossed 2 rounds in the freezer over night just for ####s, they chamber fine... anyone else had this problem?

I would do some measurements on both the warm and frozen ammo and then let the frozen ammo thaw and re-measure. Let us know what everything is if you decide to do this. Curious if it is the brass or the bullet or both.
Maybe "loaded in the winter" makes this a silly question, but did you load it in a cold garage, room, etc. and all the brass, dies, reloading equipment etc. was cold during the process including brass sizing? And what temp difference are we talking from loading to chambering? Really don't have any follow up comments, just helping to paint the picture for the smarter guy than me guy coming along later. Never had this occur, but very interesting phenomenon.

Colder garage, it was probably around 10-15 degrees celcius, and summer time chambering is around 20-35 degrees celcius dosent happen with any other rounds loaded in cooler temps, just cast rounds. Also cast pistol rounds loaded in cooler temps have no prob chambering in the hotter weather
Im thinking your lead bullets are oversized causing you finished round to be just on the edge of not fitting. With the expansion associated with the temp difference, it just pushes it over the id of your chamber.
I would do a chamber cast and compare that to your finished cartridge. Also you might want to measure your resized case neck dimension to your loaded case neck dimension...see if there is a difference.
