Thai style basil goose stir-fry.

This is a take on the classic thai basil beef but substitute goose breast for beef.

this one was a hit, everyone loved it and asked for seconds.

Ingredients:
  • 1 large goose breast very thinly sliced against the grain (about 1/8 of an inch thick) partially freezing the breast can make it easier to slice thin.
  • 2 tablespoons oil for cooking
  • 1 tablespoon garlic, crushed and sliced (about 3 to 4 cloves)
  • 1 red bell pepper, sliced in strips
  • ½ cup cubed bits a pineapple, about ½ inch cubes (optional)
  • ½ teaspoon cornstarch dissolved in 2 tablespoons of cold water.
  • 1 cup fresh basil leaf coarsely shopped (1 large bunch)

Sauce ingredients
  • 1 tablespoon chili flakes or 1 tablespoon thai sweet chili sauce (chili is optional, depending how spicy you like it)
  • 1 tablespoon soy sauce
  • 1 tablespoon of hoisin sauce or oyster sauce
  • 2 tablespoons fish sauce or worcestershire sauce
  • 1/2 tablespoon sugar
  • Juice from 1 lime


The actual cooking time it takes to make this is extremely short(less than 5 min) so make sure you have all the ingredients chopped up and ready to go.

Directions:
Marinate the sliced goose breast in about 2 to 3 tablespoons of soy sauce for about 20 min.
While goose is marinating prepare all the other ingredients.

Combine all the sauce ingredients in one small bowl ready to go.
• Heat up cooking oil until it just starts to smoke in a large frying pan or wok if you have one and add the garlic, stir, when it just starts to brown (not black) add the goose meat, stir for a few seconds
• Add the red peppers and pineapple, stir a few seconds to combine.
• Add the sauce you prepared and stir until it bubbles and reduced a bit, turn Off the heat completely and add the basil.
• Add the cornstarch solutions slowly and stir until desired thickness as achieved.
• Serve over steamed rice or noodles.
