I always worry about the fitment of the plastic stocks. Thinking on getting a dragunov choate stock to ###y up my sks. Are they any good or stick with the wood stock?

My Russian SKS just underwent the Tapco Intrafuse upgrade, the one with the blade bayonet cut. It looks great and feels even better in my hands. Go for it!
 
I had a choat drag. stock on my Chinese SKS then on my Russian ,fit was no problem on either.I sold the stock however and went back to wood.

Also have a Tapco on one of my other SKSs ,again very nice fit ,no problems (still have it ,like it better than the Dragunov for my shooting pleasure)

I went with a Tapco on my chicom as I have longer arms and I enjoy the longer length of pull, also the reason I sold my Type 97 and chose an AR instead. These stocks have come a long way, if anything it may be a tighter fit, so that you can relieve it, most likely on purpose, harder to add material than remove a bit at a time IMO.
 
I'm running the choate dragunov on my russian SKS. It fits very well, no modification necessary. I personally think it fits a lot tighter than the laminate stock the gun came with and feels more sturdy. I'd recommend it.
