You can by the AI stocks and mount a REM action which is most likely what you have seen. :D Not the real deal, which is a superb weapon!!

I wont say absolutly for sure, but I am pretty sure the whole rifle was bought from wolverinesupplies and not just an AI stock and rem guts,
Im just wondering if there is or ever was straight from AI rifles with Rem 700 actions??

Accuracy International has an upgrade kit, called the Accuracy International Chassis System, for the short action M-700, but you must supply the barrel and action. The system includes the AI stock and a box magazine with options available. Interestingly, adjustable length of pull and adjustable cheek piece are considered options, as is the choice of bi-pod and sight rail.
