I remember reading a post about an HK P7 that was initially blue but was then turned back to a stainless steel look. Of course, can't search these 2 letter words so cannot fidn the thread.

How do you call that anyway?
Are there any other options? like nickel plating or chrome or idk?

I just want a way to get some parts have the metal look (stainless, nickel, chrome, you get the idea)
am I just better going with new stainless steel parts?

yeah I found the hard chrome p7 alright
but since I don't need the entire gun unblued, I don't really have to go with a gunsmith


if I do remove the blue of these parts, will they have a stronger tendancy to rust?

I love bluing way more than parking but neither does that much to prevent rust. A modern guncoating is more effective or even a good polish with close the pores on the metal.
Bluing is a little more effective than parking but was not as easy to do in big batches.

I have found that having even a little bit of chrome in the steel along with bluing works a lot better than bluing a plain carbon steel.

I would suggest if you want a nice 2 tone look to a modern pistol you would be better off with a good quality guncoat on some of the parts than stripping and polishing it.
Stripping and polishing will give you that look you want but you will need to take decent care of it. It is not that hard though. I have lots of carbon steel knives that are polished and if you keep them oiled they are fine. I kind of like the patina polished carbon steel gets after a while but some baking soda and windex cleans it up and you can always just repolish it. It suits older style guns and knives. New pistols like the HK would suit a guncoat way more.
 
if i find someone to do hard chrome for cheapo, I'll go with that
otherwise I'll buy new stainless steel parts
