using an incorrect die to seat bullets?

I bought a 308 norma mag full sizing die but do not have the bullet seating die. Is it possible to use another calibre die (like an '06) to seat the bullet? Or will I just crush the shoulders?

Use a 300 win mag and you will be good to go. The 308 norma will probably not fit in a 30-06 seater.

Don't have a 300 Win Mag... how about a 300 H&H?

Not sure. Try one and see. I know the 300WM works for sure though.

"...how about a 300 H&H?..." Nope. The H&H case is .300" longer than the Norma. You won't be able to seat the bullet properly. Go buy the proper die.

I would be more concerned that the 300H&H die would be too narrow. You could always back the die out to seat the bullet to the proper depth, you just might get a 300Norma case jammed in the narrower body.
