Using just a single scope ring?

Over the years I have seen a lot of European hunting rifles using only one ring with a small scope.

So the other day I was trying to resolve my scope eye relief issues on my handy rifles and noticed that it seemed to work if I used just one sturdy ring with my small Leo vari 1x4 scope instead of the customary two rings.

So I'm wondering how common a practice is this?
Anyone here do the same?

Just wondering if this is a good idea before I take my rifle hunting (local).
Will just one ring be enough?
 
As long as the ring is nice and wide, and the rifle isn't a particularly heavy recoiling rifle, I don't see why this couldn't work. Not ideal IMO, but it should be functional.
 
Ya ... im sure it would work. Im not an engineer but, I would have to imagine the second ring would more than quadruple the mounting systems strength
 
1 ring would work till you bumped the scope. Willing to bet wounding or missing a shot all together.
I guess it depends on caliber of gun, quality of ring, seeing if a light tap to the scope changes point of impact.
