Walleye, my favorite fish to eat!!
Here is how I like to cook mine.
Catch some fish, fillet and debone them. I like to cut the fillets into 4" long chunks to make for more even cooking. Then I put the fish into a bowl of water and put them in the refrigerator for a day or two. This firms up the meat and makes it taste even better than fresh in my opinion.
Melt some butter in a frying pan over medium heat and put the fish in. I like to get the pan just hot enough so that when it is time to turn them (cooked 1/2 way through) they are just barely starting to brown. Then I put some garlic salt on, just enough so you can taste it but not so much it is overpowering. When they are nearly cooked I put some ground Oregano on them. I just use the dried Oregano you get in the shaker container at the store. Finish cooking the fish, I like it to be just cooked, so it is tender, moist and soft, I don't like it as much when it it fried crispy, save that for a batter recipe. Put it on a plate and put lemon juice on it.
That's it.
The garlic salt, Oregano and lemon work very well together on the fish if you do it right and it is ridiculously simple to make.
