we need mourning dove recipes by 5/9/13 !

At long last we have a mouning dove season! It has always pissed me off that they are a game bird in the US and Mexico but a songbird here. No longer the case:cool: Ontario will have it's first mourning dove season in decades startin Sept. 5 here in the sunny south and Sept. 3 in central ON.

So we need recipes quick! I bet some CGN'ers have been to dove shoots down south and know how they cook them there:confused:
 
Need one in Manitoba, as a kid we used to eat them. Love them.

Trees are full of them yesterday, I took a video I'll try and post up tonight.

for me olive oil, Salt - pepper over a fire don't over cook.
 
I got out once so far for doves and managed 6. I took the breast meat off and wrapped each 1/2 breast with a 1/3 of a strip of bacon. Put them on a bamboo skewer and under the broiler in the toaster oven for about 5-7 minutes each side (didn't time it but flipped once bacon looks good and sizzly). I took them out, pulled them off the skewers and pinned a small piece of pepperjack cheese to each with a toothpick. We had family visiting for lunch and the 12 bites were gone in seconds to a very happy crowd. the meat is fairly mild, with perhaps a hint of chicken liver flavour - delicious!
