What animals do you, or would you eat?

I was thinking about this while looking at the squirrel hunting thread. I have a Canadian outdoor cookbook from the late '60, early '70's. It is at home so I can't quote the name now, but I will later.

It was published with the assistance of the government and gives detailed instructions on preparing all sorts of animals for the table.

Included are the regular fare such as bear, deer, moose, caribou, elk, rabbits, grouse, ducks, geese etc.

Then there is racoon, squirrel, muskrat, beaver, seal, whale and I believe lynx.

What kind of stuff would you eat under normal, as opposed to survival situations?

I'd try squirrel, but lynx, cougar, wolves, coyotes, muskrats and such...I'd have to be very, very hungry!

Do any of you have some neat stories and pictures?

From what I've read, the big cats are extremely tasty and were the choice, if available, of the old Mountain Men.
I wouldn't look forward to eating swamp rats like beaver or muskrat, but would if that's all that was available. Other than that, if it's got fur or feathers, throw it on the BBQ.:D

The big cats are delicious, particularly lynx and cougar.
I am not particularly fond of skunk, beaver or muskrat, but they are edible in an emergency.
Porcupine was good, but not outstanding.
Squirrels and goundhogs [woodchucks & marmots] are good, if a bit chewy.
I could pass on most of the mustelids [wolverine, marten, otter, weasel, etc]
I could detect the "scent" they all carry with them.
By and large, most wild animals/birds are edible, but taste determines how hungry one has to be to eat them. lol.

i have never tried big cats, but i soon will have to! i too am not font of skunk and beaver and such, i have eaten pocupine and it was good, but not near as good as deer, rabbit, moose and of course elk.
 
A friend is a trapper and he eats his trap line - never buying meat. I have tried most all of his trappings and they are all fantastic! If I'm lucky, he'll load me up with some frozen meat to 'make room' in his freezer.

Besides the usual game like deer, moose, bear, rabbit (cotton tails and snowshoes) and grouse, I have eaten lynx (my dog especially liked the sample of cat!), raccoon, and muskrat. By far, my favourite is beaver. It's incredible when it's prepared like pulled-pork with home-made BBQ sauce!

He eat's opossum too. That, I haven't tried.

Getting hungry just thinking about it!
 
I have eaten lots of Prairie Chicken, bush partridge, Hungarian partridge, and whitetail. Also moose and elk. When I was a kid, we shot a porcupine and tossed it in our stew we were brewing. My Mom could cook ducks with stuffing, yum.

Other than that, you guys could have my share of cat meat.
 
Nothing beats a roaster full of "rat" legs! They're delicious when prepared properly. I've tried most of the wildlife that has a recipe for it in some wild game cookbook, except skunk. I don't know if I could eat that and I won't ever eat seal again. Tried Muktuk this past winter and can't say I'm too fond of it either. Heck, I'll try just about anything once. Worst comes to worst I'll spit it out and don't ever have to try it again.
 
Most anything goes down in stew :) Have tried many of the "not usual" animals. The weasel family has a hard to get rid of smell. I have had badger * it was fine. Skunks have beautiful white meat & I was tempted, but didn't. Beaver & muskrat are both good. Dog family is a no go,but cat are nice. We are very lucky to be able to pick what protein we eat & what we throw away.
 
As a kid I ate rattlesnake and turtle, both were ok. A Japanese friend turned me on to canned smoked eel. I've tried just about everything on the list except skunk and the mustelids
 
I checked the book, its title is "Northern Cooking". It also included woodchuck and groundhog recipes.
 
Bear Grylls said skunk tastes like it smells and he could barely down it.

I haven't tried anything but deer burgers and moose pepperettes.
The deer burgers were wayyy too bloody for me and turned me off that pretty quick.

I know I'd eat most anything in pepperette form......yeah...I'd turn a whole moose into some spicy pepperettes!!
Prepared any other way, as far as wild game goes, it would have to be nice white meat for me...something close to chicken/turkey/crab........

Is wild turkey much different than the regular old turkey that's made at the Freshco plant?
