More constructive use of a cold winter day ...


It was kind of blowing and snowing a bit too hard so I figured I'd try out the new fireplace in the basement. The GF is p*ssed because the entire house smells like pepperoni, but I just don't understand what the problem is?? :rolleyes:

Drooling here! Care to explain your proceedure with the meat in front of the fireplace?

I smoke it outside, but it needs to dry very slowly or the casings get dry and crack. I take it too and from the warm heat several times until the inside is as dry as the outside. If done too quickly, the outside is dry but still has the consistency of raw meat on the inside. I'll put it into a container tonight with dry towels for overnight, then give it a few more hours of warmth in front of the fireplace tomorrow. I like to finish it with being a tad on the soft side so when I freeze it, it will dry in the freezer a bit more and come out perfect. Some pieces dry faster than others and don't make it to the freezer, and as usual, I'm not very hungry at dinner time.

In the summer time when its warm, i can just leave it for several days to dry in the smoker with very little added heat. Not so in winter.
