I use a 30.06, but you shouldn't forget the .303 Brit. I started with one and a lot of others did as well.
 
I use a 35 Whelen 7600 "carbine" loaded up with 250gr bullets:D. Knocks anything down with authority, and not bad in recoil either. By far my favorite close range gun. I actually sold my 45/70 Guide Gun when I purchased this one, it handles just as quick and retains a lot more energy at further ranges if needed. IMO this is one of the best "all in one" gun/caliber for central/eastern Canada big game hunting.
 
.243 for deer, I have shot one moose with my .308(biggest I owned then)
If I was looking for moose/elk now, I'd be carrying my .300 wm.
Went on a guided hunt in Newfoundland, everyone was carrying somethingorother magnum. When we were leaving the guides were going out to get their own moose and most were carrying .30-30s. The biggest gun the guides had was .270. These were older guys who had shot moose all their lives. Maybe they did'nt have cable so they don't know a .30-30 won't kill a deer, let alone a moose.
 
Call me boring, but the 30-06 with 180gr Hornady Interlocks, H4350 powder, and CCI250mag primers will kill anything that I want to hunt, at any distance that I would feel comfortable taking it.
