So the inhabitants of Mexico have been cooking with chocolate, chilies, and turkey for longer than anyone can remember, and certainly longer than anyone else in the world. They probably know what they're doing when they cook with these ingredients. Mole Poblano is the combination of all three. I think leg meat would stand up better than the breast in the recipe.
