Commercially produced, so no slam bangs. :)

Maybe a break action single shot like a Baikal, H&R or something similar? Perhaps a recoil operated semi-auto? By simple it should include everything, like the trigger group, and not just the action. What do you think? And would the most simple also be the most reliable?

a semi-auto as a simple????.... ah no

you want simple and commercially produced? Remington 700. Lots of them out there bazillion different rounds available, stock trigger group.

I would imagine it would be hard to beat a cooey single shot .22 for simplicity and reliability

rolling block, far less complicated then a bolt action, look at the machining involved just to make the bolt and the raceways in the action.
the simple laminated receiver design of the rolling block is hard to beat, and aside from chambering the barrel can be made with a lot of simple tools

Does anyone have any experience with baikal single shot rifle? Besides the obvious (weight, aesthetics) do they function well?

Have you seen the simplicity of a Makarov? IIRC they are made of a total of about 30 parts or so.

Simple in terms of manufacturing (cost) or simple in terms of "nothing can break here"?

As in few parts and "nothing can break here".

Ah yes, the rolling block, I forgot about them!

I'd also like to know this. #1's and such are amazing but seem to be going up in price by the day. So for someone to get into the single shot game without dropping a lot of coin or having to cart around a Handi Rifle ( cp: ) the Baikals seem to be an interesting option. Anyone ever used one at all?

You are a funny, little fellow.... you puke at a Handi, but think a Baikal is an "interesting option."

Hmmmm...

Sten guns were pretty simple. Rifling optional, fixed firing pin, fired from an open bolt, no hand guard or pistol grip as such to worry about. The magazine was probably the most complicated part of the whole thing. HammerHead's Liberator Pistol is a step ahead of that though.
