M&P 9 for IPSC production and possibly PPC.

CR Speed? DAA? Bladetech? Ghost? What's the best bang for buck? Singles or doubles? If you recommend them, where can I order them in Canada?

(Holster is already decided: a Bladetech DOH/SR)

I'd prefer CRSpeed pouches over Ghost. They are more adjustable, so you can set the angle for each pouch individually. The DAA pouches are even more adjustable, but a bit too much to my taste. Though you may need to check if CR pouches are good for IDPA.

The 013 Safariland is the only “Race Holster” I would recommend. It holds the pistol as secure as a holster can possibly hold a pistol yet allows for an effortless draw.

While I love my Safariland Race holster (I've never used anything else) I wouldn't recommend it for an M&P9. If I had a M&P9, I would avoid all of the Race Holsters. I know they're legal in IPSC, but not in Production Division in USPSA (the US IPSC). Down the road, if you think you might want to venture down south of the border, it's a hassle needing to change gear (albeit a minor one) to comply with divisional requirements.

CR pouches are not allowed in IDPA. Uncle Mike's double pouch works very well and is cheap but may also not be allowed in IDPA as it sits further away on the belt.
I use BT holsters for IDPA and USPSA, CR pouches for USPSA and BT double pouch for IDPA. IDPA allows only 2 mags mounted on the belt. You don't shoot as much in IDPA, at the last match we had 7 stages with minimum round count of 72rds, I felt quite silly bringing in 800rds with me :D
