How long are your shots likely to be? What bullet and muzzle velocity are you planning on using?
I sighted in both my 6.5x55 and .338 Win Mag 2" high at 200yds, which puts either of them just under 3" high at 100yds and about 5" low at 300yds. For pretty much any range out to 300yds, I put the crosshairs in the middle of the chest and shoot.
I sighted my Garand in dead on at 200yds because I will not take a shot much over 200yds with iron sights in the field. This puts me 2.5" high at 100yds and just under 4" low at 250yds, which is completely adequate for the sights/ballistics/shooter combo.

Other than 3 seasons in the New Brunswick timber where I shot a couple of deer at a bit more than bayonet distance, all of my hunting has been in the 4 western provinces. I like to hunt the wind from a hide/stand in and around cover, and found that very few of my shots have come at more than 100 yds over the years. Having said that, I still sight in 2-3" high @ 100 yds. That's a good place to be for a .303 using 180gr bullets.
