Interesting question. All kinds of shooting tickles my fancy, with the the exception of bigger centerfires. I recently (and finally) got an SKS in the spring, I think more to put a smile on the faces of friends/family than anything else. It does a very fine job of that. I love my .223 for groundhogs and the odd coyote outing, my shotgun for clays/grouse/crows....but most of my shooting is with rimfire guns, and mostly .22s.
Most of the .22 shooting I've done in 2016 was while aiming at gophers on my trip to Alberta. That rifle is a CZ452 Varmint..probably my favorite .22. However, if I'm zeroing a scope or testing ammo for accuracy (=how much my gun likes it) I like to shoot off a bench with a solid rest. I like doing that too if I'm practicing long shots. That paid off in Alberta, registering hits at VERY satisfying distances.

Otherwise, reactive targets are fun..gongs/cans/frozen apples/clay pigeons/balloons etc. Only "hunting" I do in Ontario with a .22 is some pest control, namely, pigeons in barns belonging to friends. If those farms were closer to where I live, I'd do that more.
After a couple of years without one, I picked-up a 17M2 fairly recently. Ammo cost/availability will limit how much plinking I do with that one, but boy it's a fun caliber.
