I just purchased another Noveske AR-15 lower.
I already have an 18" setup for 3Gun and 2 14.5" AR's all in 5.56mm.
One of the 14.5" is a Norc which may one day be sold since I rarely shoot it anymore.

I was thinking of maybe going with a 7.5", 10.5" or maybe one in .300 BLK or 6.8 SPC.
I've been collecting 6.8 brass for a few years and I probably have 500 or more.
I have pretty much everything other than the barrel and handguard.
If I stay with 5.56 I already have a Noveske KX-5 and Surefire SFMB which can be used.

Any suggestions?

The only downside to 6.8 is you need a new bolt. I personally would go with 300BLK, it's only a few hundred feed per second slower but 30 cal bullets are much easier to find. It is also an easy cartridge to load for since there are a few powder options and you can load for any weight of bullet you can find.
It is a little picky on powder to get it to cycle in a semi auto but nothing too difficult. H110 is a favorite and A1680 is a good one for mid to heavier weight bullets and for running subsonic.
The 300BLK uses the same bolt as a 223 so if you decide you don't like it then just sell the barrel and slip in a 223/5.56 barrel and off you go.

I would suggest a 10-12 inch barrel with pistol length gas system if you go 300BLK.
If you do go 300BLK shoot me a PM and I'll share some load data with you to help you get started.

Edit, Just remembered that if you go 6.8 you also need new mags or at least mag followers.
