Which thread for a choke and why ?

You have to take it to a smith and he will tell you based on your barrel thickness what can be fitted. Not all barrels out there have enough material to take all choke threads

I'm guessing your 14" Mossberg is a 590 or 590a1 ?

If so, no worries on the barrel being thick enough for any type far as I know.

If I were to thread my Mossberg I'd do it in Rem-Choke because of my 870 thread patterns for cross compatibility.

Cross compatibility & barrel thickness are the only real concerns.

Compatibility with something you already have is the biggest reason then , there is no other reason , aside from the barrel being thick enough to support the threading ?
So far , from some other forums and talking with a few friends , it seem that threading for the Rem-choke is the way to go .
 
Those Mossberg 14" barrels are plenty thick enough for choke threading.

If you want it "authentic", then get it threaded for Mossberg Accu-chokes.
That's the same choke that the Mossberg 500 and 930 use.
 
There's also the Vamp Comp process, if you want nothing but tighter patterns.
