This is my sisters recipe. It's a sweet/tart kind of relish and goes just excellent with wild game, especially elk and deer.
Anyway, it's easy and good and the cukes are ready, so:
cucumbers (12-14 good sized ones, or an equivalent amount of smaller ones)
1 bunch celery
2 onions
2 green peppers
2 red peppers
Grind, let stand overnight.
Drain, add 2Tbsp salt, mix well.
Bring to boil:
3 to 4 cups sugar
3 cups vinegar
1tsp celery seed
1/2 tsp tumeric
1 tsp mustard seed
Add vegetables to this, cook 30 minutes. Fill hot sterile jars with hot relish and seal. If the lids don't seal, put them in your canner to seal them.
Recipe makes about 9.5-12pints depending on the size of the cukes.
I asked my sister how big of cukes to use, she laughed and said, "You've never made relish before, just use whatever and it'll turn out fine. Sometimes I also add whatever's in the fridge I want to get rid of". She's right, it turned out fine!
