Hi guys,

I need a wild turkey thigh recipe asap. I was thinking about putting it in the oven with chicken broth for like 4 hours at 300 turning over once or twice and basting. Once that is done I was thinking of pulling all the meat off the bone and adding some taco mix to it and putting it all in a pan to finish off.

I just need someone to help me make sure I get the oven part right (technique, time, temperature, etc). Any tips is appreciated.

I do a similar thing except I leave them in a slow cooker, low setting, with broth and some spices, for 10 hours or so. Let it cool, then carefully and meticulously pick the meat from the bones and tendons. I cut the meat up into small cubes (stop and examine carefully if you get a "crunch" while cutting), mix it with mayo, pepper and onion salt for the best turkey salad you ever ate. BTW I do both the thighs and drumsticks this way. I assume that is what you meant when you said "thighs". You have to separate them into the two pieces to fit them in the slow cooker.

I like your taco mix idea, but you may have to grind the meat and add some fat to make it turn out right.

Hope this helps ;-)
