No magazine capacity limits for manual action rifles, in either the CCC or hunting regulations.
Differs by province. In Ontario, the only thing that's different between the Firearms Act and hunting regs in terms of ammo capacity are shotguns, which must always be plugged to 2+1 when hunting. The hunting regs defer to federal law for rifles.
Your Ontario hunting regs limit "repeating" or "semi automatic" shotguns to 3 rounds.

I looked through the Fish and Wildlife Conservation Act 1997, S.O. 1997, C.41 for Ontario. The only mention of limiting the number of rounds in a firearm used for hunting is for shotguns.

19. A person shall not hunt with a shotgun unless the shotgun has been permanently plugged or altered so that it cannot hold a total of more than three shells at one time in the chamber and magazine. 1997, c. 41, s. 19.
It is silent with regards to rifles unless some one can find it and quote it. I'll listen if I am wrong.

(d) with a shotgun of any description capable of holding more than three shells unless the capacity of the gun has been reduced to three shells in the magazine and chamber combined, by means of the cutting off or the altering or plugging of the magazine with a one-piece metal, plastic or wood filler that cannot be removed unless the gun is disassembled; or
If someone can find the Provincial Law limiting the capacity of lever actions (or semi autos for that matter) for hunting in Ontario please quote it. Again, I'll listen if you can quote it.

This is why the Govt. wants you to buy the Firearms Safety manual, so you can look it up rather than ask on the internet and get made fun of. Likewise the Hunter Safety manual and annual hunting regulations (free if you can find one).

Ontario has no limits for rifles beyond what federal law states. And since federal law does not limit the amount of shells in a manually operated centrefire, youre good to go with 7.
