Got a Windsor Plywood near? They stock raw lumber, and you get to pick and choose. Last I looked, it was about $8 a board foot (1"x12"x12").
They have some (usually) plain Black Walnut as well as some exotics and a lot of Maple.
Want fancier wood like Bastogne or English Walnut? There are a couple sites in the states that have a decent selection of decent wood, at decent prices ($200 on up) or you can just spend a lot!!
For cheap, birch plywood from Home Depot, some white glue and a bunch of clamps. Laminate, carve, inlet, sand, stain, seal and use.
For really cheap, fir plywood, same procedure, but seal it, fill the divots with body filler, and paint.
