This year's venison sausage is back from the butcher!..... 90 pounds of hickory smoked goodness....

And yes, it's -20 right now and I will be bbq'ing like a boss tonight...

Looks awesome... Only had venison sausage a couple times and liked it much better than store bought

That's why I have them made.... I like Bbq'd sausage, but the grocery store ones are like hot dogs..... Everything that doesn't meet the starkist cut hits the sausage barrel.....

This way, I know what I am getting..... I debone my deer myself, trim all of the fat off and bring in deboned meat..... I freeze my meat so that I can bring it in when they are less busy.....and I know my but her personally, so that helps..... I have him add 20% pork fat instead of the standard 30%...... He butchers pigs for local farmers and uses pure trimmings from that..... And he smokes using natural wood, no chemicals.....

It's a much better alternative to buying store bought and getting pork scraps mixed with pork fat...... Or turkey sausages that donating God knows what....
