I've seen 9mm CZ "Shadow" (usually selling around $849-899) variously advertised as "CZ 75 Shadow", "CZ Shadow" and "CZ SP-01 Shadow". I know the "ShadowLINE" is a different model ($1,000+) but are there different "Shadow" models?

There are definitely several pistols in the SP01 series right now:
Basic CZ SP01

These will look like all the full length dust cover shadows in the series. Externally, the only difference you will notice is a standard blackened front and rear sight. Internally, it has the firing pin block and the standard springs.
CZ75 SP01 Tactical

This is the most basic model of the CZ SP01 Shadow. The Shadow designation means its built for competition in comparison to other pistols in the SP01 series. The competition features with this pistol include competition style Novak black sights, fibre optic front sight, and no firing pin block. The last feature allows for a smoother and possibly lighter trigger pull.
Now onto the Shadowline pistols... This is where it gets complicated...
CZ75 SP01 Shadow Line

First up we have the CZ SP01 Shadow Line aka Shadow Line with full length dust cover. The Shadow Line pistols are a new addition to the SP01 series this past year. These pistols are essentially upgraded versions of the basic CZ SP01 Shadow model. Externally, they share the same sights as the regular model with the exception of flush safeties, smaller CZ75 style slide release andShadow Line engraved Aluminium grips. Internally, they come with a stainless steel guide rod, and tuned reduced main and recoil springs for competition shooting. If you can find one, BUY IT!

This pistol shares the same external and internal upgrades as the above Shadow Line pistol. As you will quickly notice, this one does not have a full length dust cover. Some competition shooters prefer this model over the full length dust cover because the lighter front allows them to transition between targets faster.
CZ75 SP01 Shadow - Canadian Edition
From what I've been told, there's actually 3 tiers for the Canadian Edition Pistols. Without going into too much detail, these pistols command a premium price on the market due to its hand fitted barrels, hand fitted frame and slide, tuned trigger, tuned competition hammer.... list goes on. If you really want to find out the differences, do a quick search here find the article where Slavex comments on the difference of each model
A couple of minor corrections; the Shadowline's are actually pretty straightforward - they come with the "new style" combat hammer (kind of a tear drop, versus the round one), flush safeties, a slide stop with a different profile, a stainless guide rod, and the black aluminum grips. They were a good value based on the grips and the flush safeties (which are $75-140 and $80-125 respectively). The short dust cover version is just that; the rest of the bits are the same. They are NOT the "Shadow Mate", which is the top tier version of what we received as the "Canadian Edition".
The details on the various flavors of Canadian Shawdow's is a bit hazy. IIRC -
1. Competition hammer, regular safeties, red thin grips.
2. Competition hammer, flush safeties, red medium grips, better slide/frame and barrel bushing fit
3. As per #2, with a fibre optic rear sight and presumably even better fit.
I'm pretty sure I recall seeing a "Canadian" Shadow with the regular combat hammer back when they first showed up on the west coast, but I might be mistaken and I haven't seen one since.
And then there's the silver finished Canadian Shadows, of which I've only seen ones with the comp hammer, regular safeties, and reasonably good fitting. The Shadow Orange has the competition hammer, regular safeties (!#%!), thin grips, and better fitting. I have a Shadow Mate and an Orange, and the slide/frame fit is comparable.
Just to be more clear, I was trying to find out if there is both a CZ 75 Shadow and a CZ 75 SP-01 Shadow model.
Jo Brooks has what they are describing as a CZ 75 Shadow on sale but the photo shows no lower rail (looks pretty much like a regular CZ 75b with maybe a slightly different beavertail and extended magazine..
The Gun Dealer has a CZ 75 SP-01 Shadow and the photos show a bottom rail. Regular pricing is about the same (around $850) but the Jo Brooks gun (no "SP-01" in the title) is on sale at 759 right now
So, forgetting about all the different Shadowline and Canadian Edition models, is there such a thing as a CZ 75 Shadow? If there is, is the lack of a rail the difference between it and a basic CZ 75 SP-01 Shadow?

Snoot is referring to the bushing area of the slide regarding the fit, not a removable bushing. That's what the factory calls the hole the barrel goes through.
A CZ75 Shadow is the one with the short non railed dustcover.
The ShadowMate Canadian editions have always had the comp hammer
