I like the schrade sharpfinger I think it's called. About $20 or so. I've skinned beaver, deer bear etc with it. For duck and smaller animals I like a very thin blade like a boning knife. A bit stiffer than a fillet knife but fairly close in profile. Check out some trapping knives. They tend to be pretty cheap, sharpen easily and if you do something bad to them are easily replaced. Someone else mentioned kitchen knives great idea! Most of them are decent quality and you probably can't find a cheaper quality knife than a kitchen knife. Personally I gut in the field and everything else gets done at home, usually on the tailgate of the pick up.


Not mentioned is the saw. I have one of those take apart Wyoming saws that I use really like it but you can get a meat saw at princess auto that has a bigger bow and more stroke for less $.
 
i'll second the suggestion of a Grohmann. Love them. If you phone.email them directly you can buy seconds for half price. Usually the seconds are just imperfect handles. And by imperfect I mean extremely small chips around the pins that are not visible without close examination.
 
id vote for a mora good knives for the money they stay scary sharp and are easy to sharpen with a good stone. you want a sharp knife and one that will stay sharp that Gerber bear grylls stuff is crap really soft steel that rolls over faster then a cheap Chinese steak knife
 
I have a couple of Grohman's ... one of which, the original Russell pattern, I've had for over 45 years.
Much game dressed & skinned, and would replace either if lost or misplaced in a heartbeat.
Certainly well made (in Pictou NS) ... toured their factory about 15 years ago.

#1 D.H. Russell Canadian Belt Knife

I've not cleaned game with it (worked well on fish!), but it is a very nice knife. Also probably the most expensive of the bunch.

Never used to be, till the "survivalists" took a shine to the thing. :D
