If you had to choose one make and model of rifle in one calibre using one cartridge suitable for use in all weather for all North American big game, from deer to sheep to bear, what would it be? Not interested in load versatility etc...just sticking with a single set up and single load. Thoughts?

Hard to beat the 9.3x62 / 35 Whelan / 338-06 class of cartridge choices for all around big game hunting from where you are living.
Using a good Mauser action / controlled feed Ruger Hawkeye is a real no brainer for cost effective dependability.

Tikka T3 stainless, 270win. Particular load: 150gr Hornady Interbond, in front of H4831 ~2800-2900fps

Because of "the big stuff" I think I would go with a 300 win mag. I shot mine with 160's to 200. Your single load would depend on your rifle. That said 180's are good all round. Lung shot on deer does not wreck too much meat. A shoulder shot on bears anchors them right there. IMHO enough gun trumps just enough.

Marlin 1895GS in .45-70 with a fixed-power low-magnification scope. No question.

But I'm not limited to only one.

I would probly go with my 375ruger. been happy with my 300g bullets but for only one load I would go with a 250g TTSX.
has irons but I would keep my 2.5-8 VX3

Again? Start with a budget in mind. A $50(OK. $150) bubba'd Lee-Enfield will kill any game in North America. Including big bears.

Lee Enfield, .303 British. If its good enough for the Canadian Rangers, its good enough for me.With or without a budget.

Remington XCR II in .300 Win Mag with 200gr Partitions at +2900fps topped with a Leica ER 2.5-10x42 or maybe a VX-6 2-12x42. And it might sit in a McMillan Edge in a Remington Sporter style.
