I'm a complete newbie to competition shooting sports, but my manager at work has offered to pay my way for taking a black badge course. My pistol is a plain old CZ 75B, and the instructor of the course told me to bring 500 rounds of ammo. I was curious if there was a "standard" for 9mm ammo in IPSC... bullet weight, brand of ammo, etc., or do most shooters reload their own? What do you guys / gals shoot out of your 9mm?

You will be shooting Production division with that. Minor power factor (PF)
If you do not reload, just buy any factory 9mm and do the BB with that. More than sufficient.
If you reload, then you can play with the PF (120 minimum, the standard for that division) and test what bullet weights shoot better in your pistol.
The recoil on a Minor PF is minimal anyways, so you will probably not notice a huge difference.
Have fun, take it slow and do lots of dry fire practice. Watch and learn from really good shooters along the way.

It won't matter for your Black Badge what ammo you use but if you are buying off the shelf it will likely be 115 grain. I have used both Blazer and American Eagle, both work fine. Once you start doing matches you will have to move to a 124 grain bullet to make power factor. You could ask your Instructor if they know of bullets for sale, he might put you onto reloads that you can buy and save you some cash.

You are going to need a lot of ammo, so suggest you go to sources like Wolf Remanufactured ammo when it is available. Something like this:

Pilgrim is super helpful and saved my wife and I a lot of trial and error by recommending what cz custom springs etc... and what load specs to use.

No one will be checking the ammunition for compliance at a BB course. Power Factor only matters at a match.
Try to avoid the cheapest ammo - Tul? I've seen lots of light strikes with it and that's not something you will want to contend with during your course.
A good choice for IPSC ammo is BDX.

your CZ 75 will be sighted from the factory for 124gr bullets, so there is that
also 115gr just sucks to shoot, loud and snappy

Stand corrected, yes it is.
115gr will be fine, although it does feel "snappier" on recoil than 124gr. Here's some baseline testing I did while I was starting to develop 147gr loads.
