How polished do you want it? I've seen some pics of 686s that guys have polished up just using some Flitz and elbow grease and they came out looking great. I'd go that route first and see what I ended up with before I risked having a 'smith polish the crap out of it & maybe screw it up.
Look at the lighting where you shoot before you do that. I've had front sights disappear on my GP under fluorescents. That be far worse with a highly polished SS revolver. And worse than that in bright sunlight.
Then the best advice is to go easy and use a fair amount of hand polishing vs jamming the gun into a buffing wheel. You want to maintain the flat faces and sharp edges. If you power buff then it takes a sensitive and practiced hand to do it without making the gun look like a half used bar of soap.
If you can find Flitz that's great. Otherwise I'd suggest automotive polishing compound or Mother's Mag Wheel Polish.
I'd also sand it down with 400grit sandpaper first followed by 600 grit then 1000 before switching to one of the polishes.
Both the sandpapers and polishing cloths should be backed up with a flat or thin and flexible metal backing so the sandpapers and cloths stay flat or curve only in the one direction to suit the part. That's how you maintain the nice crisp edge lines.
Needless to say the front and rear sights need to be left flat black.
