Even commercially available chickens, turkeys, ducks, etc can have salmonella. I was talking with one of my regions large suppliers of chickens and they told me they kept their chickens inside buildings now because there have been cases of avian flu devastating local farms of chickens and turkeys and presumably spread from farm to farm by wild birds. My point being, just cook your game birds properly and enjoy ..... It's not any less safe than anything we're getting at the grocery stores. If you're worried, get a meat thermometer and make sure the internal temperature is right and enjoy.
