Last Chance Elk (Sorry in advance for the graphic in the pictures)

It's been 2 weeks on this Saturday , he's getting alittle more tender . Ground up 120 of hamburger which will be very nice, have about 50 lbs of roast still sitting in the cooler I'll give it another week if they don't soften up then I'll grind it up.
He never had a millimeter of fat on his body,he must have burned it off during the rut
When I shot him he had 3 cows with him, still trying to get alittle jiggy jiggy lol

Tough as in "Chewy"? Turn down heat and cook longer if he is... Had a "Chewy" Moose one year, that was the only solution.

Some people around here say "You needed steak knife for the gravy"

Damn that's a fine elk.

If tough...put in crock pot on low with apple juice added to the recipe. Acids in the juice break down the meat proteins and does well for tough steaks...

Don't worry about the blood, I think any issues with "gore" photos here is with all the insides not being inside. *meh*

I had the privilege while out hunting mule deer to see 13 elk in an area not accustom to them: there is always a highlight, every year, that is brought by this hobby I shall never forget.
 
You fit that whole elk in the trunk of a ford fusion? Did you take any photos lol?

If you have the time and controlled temps, let it hang for 21 days.
Just about finished cutting and wrapping a big buffalo a friend of mine shot way north of here, some of the meat was so tough I had a hard time putting the boning knife through it. The tough stuff went to sausage....a lot of sausage.

You did remove his ivories I hope. I have a box of the things most of them from cows but a couple bulls. I hunted the Porcupine Hills for 30 years and miss them.
