some of you guys are wimps. your not eating it raw. A wound in the rear leg is not going to ruin the entire animal. The red line is a good reasonable starting point and like others have said use your eyes/nose if you need to go a little further. Lots of good quality eating there, and would be a shame to waste it. For you wimps, don't ever go to a cattle butcher........you won't like what you see

Actually I know butchers that won't let an animal with a couple of hairs on them anywhere near thier plants/equipment. I had a sausage maker in Edmonton that inspected every box of meat taken to him in the truck before he let it in his shop...that's the guy I want handling any wild game of mine

Do you buy your beef chicken and pork off of him too?.... If you don't then you are being picky for no reason.
 
Thanks for the input guys. We cut the deer up tonight, there was no unusual smell at all. I cut the leg at the furline as suggested and everything looked great and smelled great. It actually looks like we lost more meat due to my crappy field dressing job than the wound. As per the suggestions of tossing the whole carcass and requesting another tag, firstly I'd hate to see good meat go to waste, secondly, I have little time to hunt, and there's a very good possibility that we wouldn't get another. We'll cook some up tomorrow, if we're still here after that I guess it was ok, if not, been nice chattin with ya ;)

It's all good Sawatzky.... I harvested one with a lame back leg and did the same and no ill effects (except sometimes when I fire up the microwave I forget my name and #### my pants)..... Just kidding of course.... :)


Also, maybe you should send me your guns to hold in case something happens?.... Just sayin'.... Lol

LOL, I have several nephews and a few friends fighting for first in line on the guns, so you better be able to fight hard to get ahead of them.

Has there been any Zombie sightings in SW Ont?

Barely, that was a rough week...no zombie sightings though. Kidding aside, tonite was round #3 for some form of venison, had a roast last Thursday, the heart on Friday, and venison tacos tonight, and it's all good. I checked the meat carefully when I cut it up, anything that looked questionable got tossed, but none of it smelled bad. I cut the leg at the fur line, and smelled it several times while trimming it, and all smelled like good meat.
 
Infection is in the blood and will be throughout the body...I don't think I would eat any of it. I would ask a professional opinion though - like a vet.
 
He's not eating it raw FFS. Once it's cooked it will be fine.

If you guys saw HALF of what goes in in animal/food processing plants you wouldn't eat anything.
