Sniffer - I think the best thing you can do for yourself is to do a lot of reading on optics and read some scope reviews for models in which you might be interested. Forum posts are not a good medium to share this type of information and it's just a big area of study.

From what you have said I suggest a Sightron 10-50X with a target reticle. It's nice to have the extra magnification when you can use it and if you are not moving, a heavier scope doesn't disadvantage you. It would be ridiculous putting it on a 7.62x39 shorty AR which is where we started.

p.s. Any decent scope with more than 10X will have parallax adjustment.

I think you have pretty much nailed where I`m at right now

I visited a local store who stock a ton of scopes yesterday and looked at a bunch. The salesman explained things pretty good but I`ve still got some homework to do (found a good resource from Vortex)

I looked at some high end scopes of all shapes and sizes and the best I came across was a fixed 44X - at a guess I`d say the scope is longer than my gun. Tried a high end Vortex with 34mm tubes and that thing was heavy!

Ultimately though I came away with the impression that I do want a higher power scope and strangely from what I`ve read of late the Sightron looks like a good choice, price point seems good and no complaints about build quality

So moving forward my list of dream guns includes (but is not limited to):

Tavor
XCR-M or L

There are a couple of others but I`m trying to stay away from restricted (hope my wife doesn't see this thread)

Are either of these suitable for long range? And if so whats the best calibre?

Not in my book. Short range is usually considered out to 400 yards, medium to 800 and long range, past 800. The semi-autos you list are not known for precision and I they wouldn't be my choice.

Almost any bolt action rifle would have a high probability for out-shooting them. For long range there are some great calibres from 6.5mm and up. While not exhaustive, read up on the following cartridges at AccurateShooter.com: 260 Rem, 6.5 Creedmoor, 6.5x47, 284 Win, 7 mm 08, 7 mm SAUM, 7 mm WSM, 308 Win, 6.5 Swede, etc. Generally costs and recoil punishment rise as the caliber rises.
