Ruger #1 scope mount issue

I've seen a few of hoytcannon's with double offset rings and thought they were okay. With a 375 I would be more worried about proper position so I didn't get beat! You could try one of the rail options that let you use weaver rings but I think they look cluttered as well. Not really a smooth classic single shot look.

I tried the egw rail , it would work but mine needed adjustment ( grinding ) so I sent it back . But double gun suggested milling extra material off once scope position is found would make it look good but it would cost a guy and then it would need finished to . Scout scope ?
 
I chose scopes for my No.1's that offer generous eye relief to avoid using extension rings. My 9.3x74R has a Leupold VX-2 3-9x50mm, my .45-70 has a Bushnell Legend Ultra HD 1.75-5x32, and my 7.62x39 has a Leupold VX-2 Ultralight 2-7x28mm -

Those look great Slamfire, very nice.
I'm also trying to keep weight down and considering my abbreviated hunting range usually 350 yds. or less the higher power is not a requirement for me.
Neither a 2-7 or a 2.5-8 would tolerate the recoil, so far a 1.5-5 seems tough enough.
I do have a mint M8-3X but again that may be going the opposite direction power-wise.
Better to have enough rather than not ?

I had a Leupold 1.5-5x20mm on my 9.3x74R (shown below) which should also be a good choice for your .375 H&H magnum. I'm surprised by the optical quality and generous eye relief of the Bushnell 1.75-5x32 scope. Seems to be an excellent scope for less than 1/2 the cost of the Leupold 1.5-5x20mm.

a nikon african with german 4 reticle can be another good choice ...
