Does the fat taste good? What will you do with it?

Some people render it down and use it for pastries and pie crusts. It can also be used in place of grease for cooking meat ect.... my mother in law in Que uses it for her pies, and pastries.
 
Yes, it makes the best pastry/crusts, plus it can be used like duck fat for making confit or rillettes.

Some like to simply render it and spread it on toast.

Excellent for waterproofing your leather boots, too.
