now is the time to take in any old meats still in the freezer from last season for sausage. The rush is gonna start soon. We're out of breakfast sausages and have lots of frozen vac-packed venison packages marked for "jerky". Will take them in now and should get it all back in a week. Here's hoping we don't get skunked this yr. I'm really really looking forward to the neck roasts done in the slow cooker, makes for awesome pulled venison!
 
Invest in a quality grinder, vertical stuffer, and a decent smoker rather than paying someone to do it for you. I just stuffed 20 lbs of summer sausage, tossed 5 lbs of jerky in the cure, and have two salmon fillets soaking to be ready for the smoker tomorrow. Next weekend will be breakfast sausage and ground meat jerky. My mouth is watering already...

It drivers me bonkers seeing and hearing about people wasting wild game/fish just to make room for more meat that they'll likely toss.
 
If your just doing it now your a bit behind. Most butchers are packed up allready with moose, deer and elk.
A month and a half ago would have been better.
I agree with making your own instead of paying the high price that butchers charge.
 
To be honest, if your doing that your poaching. It's perfectly clear in the written regulations that it is unlawful to allow the meat to become unfit for human consumption.

Doesn't make it poaching..... that's a very slippery slope you are walking on....

Not everything that breaks a game law is "poaching".....

I vac seal all of my venison roasts...... unfortunately the seal broke on one of them from last year and the meat got freezer burned and became inedible...... am I now a poacher and a hardened criminal?.....

Absolutley not, but you didn't harvest more game than you needed alowing it to spoil which is a little more relevant to what he was talking about. Which i agree isn't neccasarily poaching, just a personal "overharvest". Take what you need and if circumstances change and it turns out to be more than you can consume give away before it becomes unfit. Can't you donate unwanted game to food banks?
 
depends on the jurisdiction- some will , some don't- and some insist on it being cut and wrapped before receipt

I worked with a guy who upon hearing that I took my dog out grouse hunting he offered me all his grouse from last year! Doesnt like grouse he said, WTF! Just likes shooting stuff and a less room on the freezer I guess?

I don't believe in wasting food...... I grew up not poor, but not affluent either......

#### happens sometimes, in a chest freezer stuff sometimes falls to the bottom and gets missed..... whether that stuff is storebought or harvested is irrelevant in my opinion...... it happens to the best of us......

I think OP created a good thread to remind us that this stuff can be salvageable....... and a reminder to look for it isn't a bad thing.....

I need a friend like that!...... I don't like goose, unless jerkeyed...... so I took the time and lined up a European friend that will take all i can give him....... win win......
 
If it were to my non resident understanding the Rule would mean to not leave the animal in the field for 3 days for it to be ruined to eat, in heat.
Or by shooting on the first day but not recovering until the last day beit 3-4-5-6 days later ungutted.

Id have thought Frozen meat would last longer than a Season?

Thankfully, no such rules exist here.

Rules are funny things no matter what country you live in WL......

I too have had meat last much longer than a season...... but, I have also had meat, both storebought and wild get freezer burned because it was accidentally not packaged properly....... in less than a month....

As far as I am concerned, common sense should prevail....... I have hacked freezer burned bits off a roast and made jerkey with the rest...... I have used the meat to make my dog a "stew" in the crock pot and have used The freezer burned bits as yote bait.....

Common sense is important...... too bad that it really isn't all that common.....

No, but you aren't as good a cook yet as you can become. Some people pay a high price for freeze-dried food. Your freezer burned meat isn't essentially different. Marinade it and make stew or soup. It's not just for dogs, (but I like you for treating your dog.)

I just pulled 3 packages of moose burger out of the freezer. The butcher that cut our moose the last time, vacuum seals all the cuts, in plastic.

That burger is 4 years old now and just as good as the day it went into the freezer.
