Vanguard 2 .375 H&H

Not the same rifle, but I have a Leupold 6X that has a lot of eye relief on my 375. Probably 23 years and it has performed flawlessly. Don't remember what the rings are.
 
2.5-8x Leupold vx3 would be my scope of choice. I'd probably mount it in Leupold Dual Dovetail rings and bases.

The 2.5-8 would be a VG choice. Any bases that will fit a M700 will work on your Weatherby. I used steel weaver style on mine w/o issues but the DD are a good set up as well.
 
Depends on what you are hunting and where you are hunting it... the VX-3 2.5-8X36mm is a good scope, but for most situations that I would use a .375 H&H, I would favour the VX-3 1.5-5x20mm with standard Duplex reticle or German #4.
 
I would go up to a 3.5-10 before I went down to a 1.5-5.

Not for under 200 yards... if there were some reason to push shooting to 300 yards (plains game), then the 2.5-8X36mm is a better choice... 10X is not required on a .375 H&H IMO, unless you are prepared to optimize the load for shooting at distances requiring 10X... something like the 235 TSX @ 3000.

I agree. I made a 287 metre shot on a springbok in South Africa with my 416 Rigby which wears a 1.5-5x Leupold that was, obviously, set on 5x. That wasn't an unreasonable poke with that combination. But if you flip the script and have to take a 1o yard shot (which I nearly had to do in Zimbabwe with a 3-9x set on 3x) and you'll be wishing for lower magnification on the bottom end. Hell, even when I "cranked up" the magnification on the scope to take a 110 yard shot at my Cape Buffalo (I cranked up the mag until the sight picture looked good) I realized after the fact that I only wound the scope up to about 4.5x.

The bottom line is that you just don't need a ton of magnification to shoot game at reasonable distances, but you sure as hell want to have the field of view to make a shot close in if you have to.
 
Having a 1.5-5 on a plains game rifle is a handicap.
A 375 is capable of 300+ yard shots. Some plains game is small too.
Hoyt have you hunted plains game with a 375 and s 1.5-5?
I have and that's my opinion based on experience. The eye reliefs are similar between all these scopes. And I find the vx3 3.5-10 to have the most forgiving eye box. And a longer tube helps mount it without offset rings. Imo
