Is the 150gr bullet the ultimate weight for a hunting bullet out of a 308win

For deer sized game, with a regular cup and core style bullet like a hornaday, yes it is. When moose or elk are on the menu, you will do better to have a premium bullet like a Nosler partition or a barnes X in 150 grain to ensure penetration. Depending on your rifling twist the heavies (180 - 220 grain) may not shoot as well in .308.

I've always liked the 165gn selection for deer to moose. Use to throw 180's for moose but 165's have worked fine so now I just stay with that for everything.

While I do not own a 308, I have a Model 700 "Classic" in 300 Savage, which is very similar in performance to the 308 in that type of rifle.
I use 150 grain bullets almost exclusively in it, and have had no trouble with quick kills on deer, Black Bear, Moose and bigger varmints with
it. I hunt deer with the old style Winchester Silvertips, or Remington cor-lokts, while for bear and moose I move to the 150 Partition.
A 150 grain bullet at 2900 is quite decisive when placed correctly and is constructed well enough to get in to the vitals. Eagleye.

If for some (unthinkable:p) reason I decided to use my .308's on heavy game I would load 165 gr AB's in order to maximize its performance only because it won't properly stabilize 180gr AB's. My CZ550 for example has a 23.6" 1:12 barrel and 2900 fps MV should be safely achievable with 165gr AB's. The AB has proven to be a decent bullet that holds together well from experience with the 300gr AB in my .375 H&H Magnum on Bull Moose.

The 165gr would be about 200 fps faster than a 180gr, and only about 100 fps slower than a 150gr. And the 165gr AB should of course do quite well on Deer.

About 35 or more years ago I settled on 165 Speer Spitzer - called HotCor for many years - in my Winchester M70 308. Started with W-W 748, but long time ago went with RL-15 as per Speer and Nosler manual @ 2800 fps verified on my Shooting Chrony. We've taken many, many whitetail and mule deer and two elk with that rifle and load. Sight in at 200 yards - about -8 and -24 at 300 and 400 respectively. Go hunting. For few hunts, I used Federal premium 165 SPBT (Sierra) that seemed to work just as well.

Why 165's in a .308 Win... considering your choice in 7.62X39 (see below);

The need for speed. Got just under 2100 fps with 170gr NP's with a bit more speed possible. Coat the 180's in eel sweat (super slippery stuff!) and then see if I can safely get 2150+ fps. :p

Heavier the better in a 30 caliber. Objective is to break the shoulder joint and sever the spinal chord on heavy game with either round. Questionable with the x39. A definite maybe with my .308's.

Then why 180 grain in 7.62X39 and 165 grain in .308... considering the case capacity of those two cartridges... your logic seems confused.

Sounds like a chap that knows what he's talking about.

Although I'm thinking of using 150gr Game kings for everything
