I would definitely contact Chou Brothers Precision they are in Aurora, Ontario. They are F Class National Champions and great guys to talk to about planning a build.
 
DO you have a specific firearm you need worked on? What is the work?

Not all gun smiths are generalists. Some are great at restoration of old beauties that wouldn't touch a glock for all the money in the world. Others are more interested in upgrades and customization of modern sport guns, and don't have a clue about wood.

Or are you just making a list of all the gunsmiths?
 
The Chous are pretty busy, so if you're in a rush they won't be a good choice, but I agree they are great to deal with and would not hesitate to recommend them.

Rodger Kotanko of Dark International is my 1911/ 2011 builder, his fitment to the slide/frame and bbl is great. if not mistaken he has built 5- 1911/2011 standard/ open and single stack for the last 12 years. Located in Port Dover, Ontario. and his labor is very good.
