What would the Germans have called their rifle ammunition in WWI?

Patrone 'S'

This. Never with caliber.
Patrone S
or full name Scharfe Patrone S (Spitzgeschoß) - in this case "Live cartridge S (Spitzer-Bullet)", where bullet also can be sS - schweres Spitzgeschoß, SmK Spitz mit Kern, Leuchtspur and so on.
Separately in manuals you can fine caliber designation - Kaliber 7,9 mm

also fcharfe Patronen or scharfe Patronen patronen not patrone always in metric and yes S in front after the spitzer bullet was designed. many Austrian rifles had the S stamped on the receiver to indicate change.
