Why doesnt someone start a new thread on this, instead of hijacking someone elses?

Easy there, sport. Topic drift is the normal progress of discussions everywere.
Besides, the question is certainly relevant to a story about the hunting and shooting of a bear.

Why so defensive, are you trying to hide something?

if you can't eat it ,don't kill it.so , give the kid a brake. you guys,i've seen in my time about spotsman who've killed deer ,cougar ,bear just for the hides and they called them selfs sportsmen and had two -three deep-freezes of salmon ever year and throw them out because of freeze burn thats good under your standards. thats b.s. if you don't need it ,don't kill it. fact or fiction. so,don't piss in the pickles you guys.

Bear meat is often VERY good.

However - being omnivores they tend to taste a lot different depending what they've been eating. BC bears are tasty - but if you get a salmon fishing bear it's not so good. I've heard that people in other provinces have had different expereinces with theirs.

All bear meat is good - EXCEPT the fat. The fat holds all the rancid flavour and will utterly ruin an otherwise good cut of meat if left on while cooking. (you can apperently render it to lard, which is supposedly amazing to use in pastry. I've never tried this.)

So - if you get a bear, ask the butcher to cut all the fat off, and trim it yourself if necessary before cooking. Connective tissue is fine, but 'fat' fat has got to go.

I suspect a lot of people who say their bear was terrible did not know this little fact.

I ate two bears this season, one I shot and brough to a meat cutter with almost no fat. the other was given to mee in quarters and I had asked for all Hamburger and Sausage, well, in the cooler was a big chunk af fat (I was not aware of this) He used it in the sausages and in the burger. I was very surprised that there was no gamey taste or any foul taste.
Maybe the fact that the bear had been eating bread and donuts for a month might help.

PSST... little secret, when you do remove all of the fat for any game, when making burgers, replace the fat with melted garlic butter. it is sooooo good.

I dont have anything to hide. Im offended when someone (MD) comes in to this post and starts bashing about the regs.

Hey man good job!

I am thinking of going for my first bear this year as well.

I personally haven't tried bear meat but I heard it is good. But make sure it is well cooked because you can die from it if it aint.

Nice bear, had one about that size walk through my backyard the other week.

Did you keep the hide?
Grats

Congratulations on a good bear! I'm jealous; I didn't get out for bear this spring.

As for the meat, bear has an oily meat like goose, and as such makes EXCELLENT sausage meat.

Bear pepperoni and salami are wonderful. Ground for use in tacos etc is also very good. If you don't fancy the taste of bear straight, spice 'er up!

Here's hoping the hide turns out excellent, and keep hunting!
