So, how much effort would it take to take a regular cz858 or vz58 and turn it into a short barreled rifle? Can one chop the barrel on a rifle without legal hassle besides changing it's class? Has anyone done this already? Any plans in the future for a product similar to this to be shipped into Canada? Why is the sky blue?

why bother shortening a CZ858? when it is cheaper and less hassle if you sold your non-rest CZ858 and bot a restricted VZ58.

Chop a the barrel under 18.5 and it is prohibited.

Chop an already restricted VZ58 is fine.

I would like something different.

For clarification, if I were to chop a CZ858 barrel to something like 11"-12" then it'd be a prohib? But if I chopped a VZ58 barrel any shorter then it's fine because it's already restricted?

Correct. You can't chop a non-restricted barrel under 18.5, ever.

As for the restricted, you can't make it any more restricted.
